Oatmeal Cookie Zenergy Date Balls | a Hippie Unbaked recipe

It's snack time! And today I'm whipping up one of my old favorites: Zenergy date balls!

These little guys serve as the perfect pre/post workout fuel, a snack on the go, or even that sweet bite we sometimes crave after dinner time.

Nuts, oats, dates, almond butter, flaxseed meal, and spices blend together while creating a smooth and deliciously crunchy texture.

The touch of honey adds just the right amount of sweetness to create a satisfying bite.

Roll 'em into balls, pop 'em in the fridge for the week, and BAM! Healthy snacks are prepped and ready. Here's the super easy recipe:

Serving size: 12-15 balls

Prep time: 5 minutes | Total time: 15 minutes

INGREDIENTS

  • 1 cup nuts (I recommend pecans, walnuts, or almonds)

  • 1 cup old-fashioned oats

  • 3 medjool dates

  • ½ cup almond butter

  • ¼ cup honey

  • 1 teaspoon vanilla extract

  • 2 teaspoons ground cinnamon

  • 1/8 teaspoon ground nutmeg

  • 1/3 cup flaxseed meal

Optional add-ins: 1/3 cup raisins or chocolate chips

DIRECTIONS

1. Add all ingredients into a food processor or blender and mix until it starts to clump together,

2. Unplug your device, and roll out your dough into 12-15 balls.

3. Refrigerate and enjoy for up to 4 days, or freeze and enjoy within 3 months!
