What the heck is a "flapjack"?
In the United Kingdom, a flapjack refers to a baked bar, cooked in a flat oven tin and cut into rectangles, made from rolled oats, and other ingredients.
They're traditionally sweet.
This one, my friends, is not. It's a savory oat bake filled with zucchini, red pepper, and olive deliciousness that warms your belly, and your heart.
I'd go as far as saying this one is a healthy comfort food. It's perfect for those nights that you want a nourishing cozy meal to fill you up and make your insides happy.
It's full of fiber-rich oats, zucchini, red onion, red peppers, and kalamata olives so you are truly eating the rainbow. It's so important to mix the colors of your veggies to get a balance of all the healthy vitamins and minerals. This is a delicious way to do that.
Plus it's great as leftovers!
Serving size: 4-6 servings
Prep time: 20 minutes | Cooking time: 35 minutes | Total time: 55 minutes
INGREDIENTS
1 tbs coconut oil
1 small red onion, finely chopped
1 red bell pepper, diced
2 zucchini squash, grated
3 tbs Kalamata olives, pitted and sliced
2 eggs or flax eggs, lightly whisked
1/4 cup olive oil
2 1/2 cups gluten-free rolled oats
1 1/2 tsp dried oregano
1 tsp sea salt
1/2 tsp black pepper
(optional) 1 cup crumbled feta cheese
DIRECTIONS
Preheat the oven to 400 degrees
Line a square baking tin with parchment paper
Heat the coconut oil in a pan over medium heat
Once melted, add the onions and red bell pepper. Sauté until soft.
Add the zucchini and olives and cook for 3 more minutes
Transfer for a large mixing bowl add the eggs or flax eggs, olive oil, oats, oregano, salt and pepper.
Mix to combine then transfer to the prepared tin and spread evenly. Pat it down into the tin so it takes the shape.
Add a touch more oregano on top, and add the crumbled feta if using.
Bake for 35 minutes or until golden brown and cooked through. To add extra color, turn on the broiler for a few short minutes and monitor to it doesn't burn.
Allow to cool before cutting into 9-12 squares.
