Raw Chocolate Love

Welcome to my very first post on the Live Consciously blog!

My intention for this blog is to create a space where I can share yummy health-coach-approved recipes that will make you salivate and will spark creativity in your own kitchen.


Today I'm coming at you with a Hippie Unbaked concoction.


Hippie Unbaked is the Raw Vegan Treat side project that I began in 2018. I tested out raw vegan recipes in my home kitchen for years before I launched. I became fascinated when learning that I could indulge my sweet tooth without guilt or sugar crash all by whipping up sweet treats from simple ingredients.


Increased popularity from family and friends encouraged me to spread this passion and create the brand Hippie Unbaked so that my community of Denver, CO can join the raw vegan movement and reap the health rewards too!


Studies have shown that some benefits of a raw food diet include:

  • decreased inflammation

  • improved digestion

  • improved heart health

  • optimal liver function

  • preventing cancer

  • improving regularity

  • more energy

  • clearer skin

While I'm not vegan and don't eat strictly raw foods (I've tried a number of different diets and found my body feels best as a pescatarian), I aim to incorporate the principals of a minimally processed and plant-based lifestyle at home.


Here is the recipe for this deeeeeelish Beatnik brownie:



Serving Size: 6 squares Prep Time: 15 minutes, Total Time: 3 hours


Brownies:

-2 cups medjool dates, packed & pitted

-1 cup raw almonds

-1/2 cup raw almond butter

-1/2 tsp salt

-1/2 cup raw cacao powder

-1 banana

-1/4 cup melted coconut oil (foods kept at temps below 118ºF are considered raw)

-(optional) 1/2 tsp cinnamon


Caramel Frosting (optional, not shown in pic):

-1/2 cup medjool dates (pitted) soaked in hot water for 5 minutes

-3 tbsp tahini

-2 tbsp water

-1/4 tsp salt


Directions:

  1. Line a square baking pan with parchment paper

  2. Add the dates and almonds with salt and cinnamon, if using, to a food processor and blend until evenly combined

  3. Add in all other ingredients for the brownies and blend together until it forms a ball

  4. Take out the thick mixture and spread in your pan to your preferred *thiccness*. It likely won't reach the sides of the pan

  5. For frosting, add all ingredients into the food processor and blend until smooth then spread on top

  6. Top with coconut, sunflower seeds, or any other topping of your choosing

  7. Cover the pan and pop it into the fridge for at least 3 hours to set

  8. Cut into squares and enjoy!
