Crunchy BBQ Chickpeas

Snacks are important.


There are at least two times each day in between meals where I feel some hunger coming on, but it's still a ways off from the next meal.


In those times, having a healthy and quick snack nearby (preferably one that I can eat with my hands and no utensils) is everything.


These BBQ chickpeas are perfect for just that, and are easy to make too. They give you that satisfying savory crunch that you're looking for out of a snack, and the fiber and plant protein will leave you feeling goood.


You can also throw them on top of a salad to really spice things up.


I make mine right in the toaster oven too, so no need to pre-heat the whole oven and heat the whole house up. Plus, what a time saver!

Prep time: 5 minutes | Cook time: 70 minutes | Total time: 1 hour 15 minutes


INGREDIENTS


1 15 oz can of chickpeas

1 tbsp olive oil or avocado oil

1 tsp maple syrup

1/4 tsp paprika

1/4 tsp chili powder

1/4 tsp garlic powder

1/2 tsp sea salt

Pinch black pepper


DIRECTIONS

  1. Preheat toaster oven or conventional oven to 350 degrees.

  2. Drain and rinse chickpeas, then spread in a single even layer on a pan.

  3. Bake bare chick peas for 30 minutes. This will crisp them up!

  4. Remove chickpeas from oven and toss with oil. Bake for another 20-30 minutes, or until they turn golden brown.

  5. Remove and immediately toss with your spices, then return to oven for 10 minutes.

  6. Turn off oven and let cool in the oven.

The cooler they are, the crispier they’ll get! These will keep at room temperature in a tightly sealed container for 4 – 5 days, but I doubt they'll last that long without getting eaten. ;)
